Ingredients

  • 250g plain flour
  • 60g icing sugar
  • 120g vegan butter
  • 34 tbsp cold water
  • 400ml coconut cream
  • 200g vegan cream cheese
  • 60g icing sugar
  • 1 tsp vanilla extract
  • 2 tbsp cornflour
  • 400g strawberries
  • 2 tbsp strawberry jam

Instructions

  1. Prepare crust dough and chill.
  2. Bake tart shell until golden.
  3. Make creamy filling and cool slightly.
  4. Fill cooled shell.
  5. Arrange strawberries on top.
  6. Brush with glaze.
  7. Chill until set.

Notes

Use full-fat coconut cream for best texture. Dry strawberries before topping. Chill before slicing. Best served fresh.
