- 250g plain flour
- 60g icing sugar
- 120g vegan butter
- 3–4 tbsp cold water
- 400ml coconut cream
- 200g vegan cream cheese
- 60g icing sugar
- 1 tsp vanilla extract
- 2 tbsp cornflour
- 400g strawberries
- 2 tbsp strawberry jam
Instructions
- Prepare crust dough and chill.
- Bake tart shell until golden.
- Make creamy filling and cool slightly.
- Fill cooled shell.
- Arrange strawberries on top.
- Brush with glaze.
- Chill until set.
Notes
Use full-fat coconut cream for best texture. Dry strawberries before topping. Chill before slicing. Best served fresh.
