- 250g digestive biscuits
- 120g melted butter
- Pinch of salt
- 600g full-fat cream cheese
- 150g caster sugar
- 3 large eggs
- 1 tsp vanilla extract
- 200g sour cream
- 1 tbsp lemon juice
Instructions
- Crush biscuits and mix with melted butter and salt.
- Press into a springform pan and chill.
- Beat cream cheese until smooth.
- Add sugar and mix gently.
- Add eggs one by one.
- Mix in vanilla, sour cream, and lemon juice.
- Pour into crust.
- Bake until edges are set and center slightly wobbles.
- Cool in oven slowly.
- Chill overnight before serving.
Notes
Use room-temperature cream cheese for best texture. Do not overmix. Chill overnight for best flavor. Serve with berries, honey, or plain for a classic taste.
