Ingredients
Green Cabbage 1 head
Carrots 2 large
Vegan Sour Cream 2 cups
Zucchini 2 cups
Mayonnaise 1/4 cup
Yellow Mustard 2 tbsp
Lemon Juice 1/4 cup
Chives 1/2 cup
Black Mustard Seeds 1 tsp
Garlic 3 cloves
Instructions
Shred cabbage and carrots using a mandoline
Blend zucchini with vegan sour cream and mayonnaise
Add lemon juice, mustard, chives, and garlic
Adjust seasoning to taste
Mix dressing into cabbage-carrot slaw
Cover and refrigerate at least 1 hour
Notes
Use napa cabbage for tamer flavor
Substitute coconut yogurt if vegan sour cream unavailable
Add cheddar (vegan) for extra richness (optional)
