Ingredients
Ground Beef
1 lb (450g) 80/20 or 85/15 lean
Yellow Onion
1 medium, finely diced
Garlic
2 cloves, minced
Chili Powder
1 tbsp
Cumin
1 tsp, toasted if desired
Paprika
1 tsp (smoked preferred)
Salt
1 tsp
Black Pepper
1/2 tsp
Olive Oil
1 tbsp for sautéing
Instructions
Dice onion, mince garlic, measure spices
Heat 1 tbsp olive oil in a skillet over medium heat
Sauté onions 5-7 minutes until golden, add garlic and cook 1 minute
Sprinkle cumin and paprika directly into pan, stir into onions
Add ground beef in a single layer, cook 3-4 minutes before breaking into 1/2-inch chunks
Add chili powder, salt, and pepper
Pour 1/4 cup water, cover, and simmer 5 minutes
Rest meat 5 minutes before serving
Notes
Cast iron skillet yields best heat retention
Keep meat in small chunks for TCHAR texture
Let rest after cooking to preserve juices
