Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup cold butter
  • 1/4 cup powdered sugar
  • 1 egg yolk
  • 2 tbsp cold water
  • 2 cups milk
  • 4 egg yolks
  • 1/2 cup sugar
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tbsp butter
  • 2 cups fresh strawberries
  • 2 tbsp apricot or strawberry jam (optional)

Instructions

  1. Make pastry dough and chill 30 minutes.
  2. Roll out dough and line tart pan.
  3. Bake shell at 350°F (180°C) for 20–25 minutes.
  4. Heat milk in saucepan.
  5. Whisk yolks, sugar, and cornstarch.
  6. Add warm milk slowly, then return to heat.
  7. Cook until thickened, stirring constantly.
  8. Stir in vanilla and butter.
  9. Cool custard and fill tart shell.
  10. Arrange strawberries on top.
  11. Brush with warmed jam if desired.
  12. Chill before serving.

Notes

Cool custard fully before filling shell. Add strawberries shortly before serving for freshest texture. Store chilled.
