- 1 1/4 cups all-purpose flour
- 1/2 cup cold butter
- 1/4 cup powdered sugar
- 1 egg yolk
- 2 tbsp cold water
- 2 cups milk
- 4 egg yolks
- 1/2 cup sugar
- 3 tbsp cornstarch
- 1 tsp vanilla extract
- 1 tbsp butter
- 2 cups fresh strawberries
- 2 tbsp apricot or strawberry jam (optional)
Instructions
- Make pastry dough and chill 30 minutes.
- Roll out dough and line tart pan.
- Bake shell at 350°F (180°C) for 20–25 minutes.
- Heat milk in saucepan.
- Whisk yolks, sugar, and cornstarch.
- Add warm milk slowly, then return to heat.
- Cook until thickened, stirring constantly.
- Stir in vanilla and butter.
- Cool custard and fill tart shell.
- Arrange strawberries on top.
- Brush with warmed jam if desired.
- Chill before serving.
Notes
Cool custard fully before filling shell. Add strawberries shortly before serving for freshest texture. Store chilled.
