Ingredients

- 220g plain flour
- 120g cold butter
- 50g sugar
- 1 egg yolk
- 2 tbsp cold water
- Pinch of salt
- 250ml heavy cream
- 200g mascarpone or cream cheese
- 60g powdered sugar
- 1 tsp vanilla extract
- 400g fresh strawberries
- 2 tbsp apricot jam or honey
Instructions
- Make pastry dough and chill.
- Roll out and line tart pan.
- Bake crust until golden.
- Cool completely.
- Whip cream.
- Mix mascarpone, sugar, vanilla.
- Fold cream into mixture.
- Fill tart shell.
- Arrange strawberries.
- Brush with glaze.
- Chill and serve.
Notes
Use cold cream for best texture. Dry strawberries well. Fill tart close to serving time. Store chilled.
