A beautiful Strawberry Cream Tart made with a buttery crust, fluffy cream filling, and fresh glossy strawberries. Perfect for spring desserts, tea time, or celebrations.

Ingredients

Scale
  • 220g plain flour
  • 120g cold butter
  • 50g sugar
  • 1 egg yolk
  • 2 tbsp cold water
  • Pinch of salt
  • 250ml heavy cream
  • 200g mascarpone or cream cheese
  • 60g powdered sugar
  • 1 tsp vanilla extract
  • 400g fresh strawberries
  • 2 tbsp apricot jam or honey

Instructions

  1. Make pastry dough and chill.
  2. Roll out and line tart pan.
  3. Bake crust until golden.
  4. Cool completely.
  5. Whip cream.
  6. Mix mascarpone, sugar, vanilla.
  7. Fold cream into mixture.
  8. Fill tart shell.
  9. Arrange strawberries.
  10. Brush with glaze.
  11. Chill and serve.

Notes

Use cold cream for best texture. Dry strawberries well. Fill tart close to serving time. Store chilled.
