Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter
  • 600g cream cheese
  • 150g sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 200ml sour cream
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 160°C.
  2. Mix crushed biscuits with melted butter.
  3. Press into pan and chill.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs one by one.
  6. Mix in vanilla, sour cream, lemon juice.
  7. Pour into crust.
  8. Bake 55–60 minutes.
  9. Cool and refrigerate overnight.

Notes

Use room temperature ingredients for smooth texture. Do not overbake. Chill overnight for best results. Top with berries or sauce if desired.
