- 200g digestive biscuits
- 100g unsalted butter
- 600g cream cheese
- 150g sugar
- 3 eggs
- 1 tsp vanilla extract
- 200ml sour cream
- 1 tbsp lemon juice
Instructions
- Preheat oven to 160°C.
- Mix crushed biscuits with melted butter.
- Press into pan and chill.
- Beat cream cheese and sugar until smooth.
- Add eggs one by one.
- Mix in vanilla, sour cream, lemon juice.
- Pour into crust.
- Bake 55–60 minutes.
- Cool and refrigerate overnight.
Notes
Use room temperature ingredients for smooth texture. Do not overbake. Chill overnight for best results. Top with berries or sauce if desired.
