A rustic strawberry galette with flaky buttery pastry and juicy fresh strawberries. This easy free-form tart is simple, beautiful, and perfect for any dessert table.

Ingredients

  • 250g plain flour
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 170g cold butter
  • 56 tbsp ice water
  • 500g strawberries
  • 80g sugar
  • 1 tbsp cornflour
  • 1 tsp lemon juice
  • 1 egg

Instructions

  1. Make pastry dough and chill.
  2. Mix strawberries with sugar and cornflour.
  3. Roll dough into a circle.
  4. Add filling to center.
  5. Fold edges over fruit.
  6. Brush with egg wash.
  7. Bake until golden and bubbling.
  8. Cool slightly before serving.

Notes

Keep butter cold for flaky pastry. Do not overfill the galette. Best served warm with cream or vanilla ice cream.
