Ingredients

- 250g plain flour
- 1 tbsp sugar
- 1/2 tsp salt
- 170g cold butter
- 5–6 tbsp ice water
- 500g strawberries
- 80g sugar
- 1 tbsp cornflour
- 1 tsp lemon juice
- 1 egg
Instructions
- Make pastry dough and chill.
- Mix strawberries with sugar and cornflour.
- Roll dough into a circle.
- Add filling to center.
- Fold edges over fruit.
- Brush with egg wash.
- Bake until golden and bubbling.
- Cool slightly before serving.
Notes
Keep butter cold for flaky pastry. Do not overfill the galette. Best served warm with cream or vanilla ice cream.
