A rich, ultra-creamy cheesecake made with full-fat cream cheese, sour cream, and vanilla on a buttery biscuit base. Smooth, luxurious, and perfect for any occasion.

Ingredients

Scale
  • 250g digestive biscuits
  • 120g unsalted butter, melted
  • 600g full-fat cream cheese
  • 200g sugar
  • 200ml sour cream
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1 tbsp lemon juice
  • 2 tbsp plain flour

Instructions

  1. Crush biscuits and mix with melted butter.
  2. Press into a springform pan and chill.
  3. Beat cream cheese until smooth.
  4. Add sugar and mix well.
  5. Add sour cream, vanilla, and lemon juice.
  6. Add eggs one at a time.
  7. Fold in flour gently.
  8. Pour mixture over crust.
  9. Bake at low temperature until set.
  10. Cool slowly, then refrigerate overnight.

Notes

Use room temperature ingredients. Do not overmix. Chill overnight for best texture. Serve with berries or fruit compote if desired.
