Ingredients

- 250g digestive biscuits
- 120g unsalted butter, melted
- 600g full-fat cream cheese
- 200g sugar
- 200ml sour cream
- 3 large eggs
- 1 tbsp vanilla extract
- 1 tbsp lemon juice
- 2 tbsp plain flour
Instructions
- Crush biscuits and mix with melted butter.
- Press into a springform pan and chill.
- Beat cream cheese until smooth.
- Add sugar and mix well.
- Add sour cream, vanilla, and lemon juice.
- Add eggs one at a time.
- Fold in flour gently.
- Pour mixture over crust.
- Bake at low temperature until set.
- Cool slowly, then refrigerate overnight.
Notes
Use room temperature ingredients. Do not overmix. Chill overnight for best texture. Serve with berries or fruit compote if desired.
