Ingredients
4 (6 oz) chicken breasts
1/2 cup (1 stick) unsalted butter, softened
4 cloves garlic, minced (or 1 tsp garlic powder)
1 tbsp lemon zest
1 tbsp each fresh thyme and dill (or oregano)
1 tsp salt
1/2 tsp black pepper, freshly ground
Instructions
In a bowl, combine softened butter, minced garlic, lemon zest, herbs, salt, and pepper
Pat chicken breasts dry. Spread butter mixture under the skin and over both sides
Preheat oven to 425°F (220°C). Place a rack in the lower third position
Set chicken on a wire rack over a rimmed baking sheet
Bake for 40 minutes, basting every 10 minutes with pan juices
Increase oven to 450°F (230°C). Roast 10-15 minutes for golden skin
Rest for 10 minutes. Slice against the grain
Notes
For best results, use room temperature chicken
Patting skin dry before baking enhances crispness
Insert a thermometer to ensure 165°F (74°C) internal temperature
Avoid basting during the final roasting phase to prevent steaming
