Ingredients
1 lb 85% lean ground beef
6 flour or corn tortillas
1 large chopped onion
1 tsp minced garlic
1 tsp ground cumin
1 tsp chili powder
1 tsp salt
1/2 tsp black pepper
1 medium avocado
1/4 cup chopped cilantro
1 large lime (zest and juice)
2 tbsp olive oil
Fresh cilantro leaves (optional garnish)
Lime wedges (for serving)
8 oz salsa (optional)
Instructions
Line a 12-inch skillet with parchment paper
Add ground beef to skillet, breaking apart clumps
Cook over medium heat (350°F) until browned (8-10 minutes)
Stir in chopped onion until translucent (5 minutes)
Blend in garlic, cumin, chili powder, salt, and pepper
Add 2 tbsp olive oil, stir to coat beef mixture
Spread beef mixture in skillet
Place tortillas directly over beef in a single layer
Tightly cover with aluminum foil
Bake at 350°F for 45 minutes, then remove foil and bake 5 more minutes
Top with avocado-cilantro-lime sauce before serving
Notes
Use parchment paper for easy cleanup
Flour tortillas soften better; corn tortillas add crunch
Substitute 1/2 cup lime juice for the whole lime if measuring by volume
