4 (6 oz) boneless, skinless chicken breasts
1/2 cup garlic butter (1/4 cup butter + 2 minced garlic)
1 lemon, sliced with zest
1 tbsp fresh parsley, chopped
Salt and pepper to taste
Instructions
Pound chicken to 1/4-inch thickness for even cooking
Pat dry and season both sides with salt and pepper
Heat garlic butter in an oven-safe skillet over medium flame
Add chicken and sear 3-4 minutes per side until golden
Add lemon slices and thyme sprigs, cover the pan
Bake at 375°F (190°C) for 15 minutes
Let rest 5 minutes before serving
Notes
For extra flavor, use bone-in chicken first and remove after searing
Caramelize minced shallots in the pan after searing
Brush garlic butter onto chicken during rest for a glossy finish
Line the pan with parchment paper for easier cleanup and even browning
