Ingredients
Scale
- 500g rhubarb
- 200g sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 300g flour
- 200g butter
- 1 egg
Instructions
- Make pastry and chill.
- Mix rhubarb filling ingredients.
- Roll out base crust.
- Add filling.
- Cover with top crust and seal.
- Brush with egg wash.
- Bake at 180°C for 45–50 minutes.
- Cool before slicing.
Notes
Keep butter cold for flaky pastry. Let pie cool completely before slicing. Serve with ice cream or cream for best taste.
