Ingredients

  • 250g digestive biscuits, crushed
  • 100g melted butter
  • 2 tablespoons sugar
  • 225g cream cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 400g fresh strawberries
  • 2 tablespoons strawberry jam
  • 1 tablespoon warm water

Instructions

  1. Mix biscuit crumbs, butter, and sugar.
  2. Press into tart pan and chill 30 minutes.
  3. Beat cream cheese until smooth.
  4. Add powdered sugar and vanilla.
  5. Whip cream and fold into cream cheese mixture.
  6. Fill chilled crust and smooth top.
  7. Arrange strawberries on top.
  8. Brush with jam glaze.
  9. Chill for at least 2 hours before serving.

Notes

Use ripe strawberries for best flavor. Chill thoroughly before slicing. Make ahead for easier serving. Store refrigerated up to 3 days.
