A fresh and healthy low-fat basil pesto made with basil, garlic, Greek yogurt, lemon juice, and a touch of olive oil. Light, creamy, and full of flavor.

Ingredients

Scale
  • 2 cups fresh basil leaves
  • 2 cloves garlic
  • 2 tbsp pine nuts
  • 2 tbsp olive oil
  • 2 tbsp Greek yogurt
  • 2 tbsp parmesan cheese
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and dry basil leaves.
  2. Lightly toast nuts.
  3. Blend basil, garlic, and nuts.
  4. Add yogurt, oil, parmesan, and lemon juice.
  5. Blend until smooth but slightly textured.
  6. Season to taste.
  7. Store in a jar and refrigerate.

Notes

Use fresh basil for best flavor. Do not overblend. Add lemon juice for brightness. Store with a thin layer of olive oil on top to preserve freshness.
