- 2 1/2 cups all-purpose flour
- 1 cup cold butter
- 1 teaspoon salt
- 1 tablespoon sugar
- 6–8 tablespoons ice water
- 5 cups rhubarb, chopped
- 1 1/4 cups sugar
- 1/4 cup flour or cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Pinch of salt
Instructions
- Mix flour, salt, and sugar.
- Cut in butter until crumbly.
- Add ice water and form dough; chill.
- Mix rhubarb, sugar, flour, vanilla, lemon juice, and salt.
- Roll bottom crust into pie dish.
- Add filling.
- Cover with top crust and seal edges.
- Cut slits on top.
- Bake at 375°F for 45–55 minutes.
- Cool completely before serving.
Notes
Use cold butter for a flaky crust. Let pie cool fully so filling sets. Serve with ice cream or whipped cream for best flavor.
