Ingredients

  • 300g plain flour
  • 150g cold unsalted butter
  • 2 tbsp sugar
  • Pinch of salt
  • 67 tbsp cold water
  • 500g rhubarb (chopped)
  • 150g sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Instructions

  1. Mix flour, sugar, salt.
  2. Rub in butter until crumbly.
  3. Add water and form dough.
  4. Chill dough.
  5. Mix rhubarb with sugar.
  6. Add cornstarch, lemon, vanilla, cinnamon.
  7. Line pie dish with pastry.
  8. Add filling.
  9. Cover with top crust or lattice.
  10. Bake until golden and bubbling.
  11. Cool before serving.

Notes

Use cold butter for flaky pastry. Let rhubarb sit with sugar before baking. Cool pie before slicing for best results. Serve with cream or ice cream.
