Ingredients

- 300g plain flour
- 150g cold unsalted butter
- 2 tbsp sugar
- Pinch of salt
- 6–7 tbsp cold water
- 500g rhubarb (chopped)
- 150g sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
Instructions
- Mix flour, sugar, salt.
- Rub in butter until crumbly.
- Add water and form dough.
- Chill dough.
- Mix rhubarb with sugar.
- Add cornstarch, lemon, vanilla, cinnamon.
- Line pie dish with pastry.
- Add filling.
- Cover with top crust or lattice.
- Bake until golden and bubbling.
- Cool before serving.
Notes
Use cold butter for flaky pastry. Let rhubarb sit with sugar before baking. Cool pie before slicing for best results. Serve with cream or ice cream.
