1 lb ground beef (80% lean)
1 yellow onion (finely chopped)
2 cloves garlic (minced or pressed)
1 tsp fine sea salt
1/2 tsp freshly ground black pepper
1 tbsp olive oil (for pan finishing)
Instructions
Combine beef, onions, garlic, salt, and pepper in bowl
Divide into 4 equal portions and shape into 1/2-inch thick patties
Cover and refrigerate patties for 15 minutes
Preheat cast iron skillet over high heat until smoking
Add olive oil and cook patties 2-3 minutes per side
Bake buns 2-3 minutes, then layer with lettuce and toppings
Notes
Chill patties to prevent spreading
Room-temperature meat ensures even cooking
Optional rest final product 5 minutes before serving
Substitute ground turkey (add mozzarella to moisten)
