Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mash bananas in a large bowl until mostly smooth.
- Stir in honey, eggs, Greek yogurt (or applesauce), coconut oil, and vanilla.
- Whisk together whole wheat flour, baking soda, baking powder, salt, and cinnamon in another bowl.
- Gently fold dry ingredients into banana mixture until just combined.
- Fold in nuts, seeds, or chocolate chips if desired.
- Pour batter into loaf pan and smooth the top.
- Bake 50-60 minutes until a toothpick comes out clean.
- Cool 10-15 minutes in pan, then transfer to wire rack.
Notes
Use very ripe bananas for best flavor. Optional add-ins include nuts or chocolate chips. Store wrapped at room temperature for 3-4 days or freeze up to 3 months. Warm slices for a fresh-baked experience.
