Ingredients

- 220g gluten-free flour blend
- 100g butter
- 50g sugar
- 1 egg yolk
- 2–3 tbsp cold water
- 250g mascarpone
- 150ml whipping cream
- 50g icing sugar
- 1 tsp vanilla extract
- 400g fresh strawberries
- 2 tbsp strawberry jam
Instructions
- Make dough with flour, butter, sugar, yolk, and water.
- Chill dough for 30 minutes.
- Roll out and bake tart shell until golden.
- Cool completely.
- Whip mascarpone, cream, icing sugar, and vanilla.
- Fill tart shell.
- Top with sliced strawberries.
- Brush with warm jam and chill before serving.
Notes
Use ripe strawberries for best flavor. Chill before serving. Add strawberries close to serving time for freshest texture.
