Ingredients

  • 220g gluten-free flour blend
  • 100g butter
  • 50g sugar
  • 1 egg yolk
  • 23 tbsp cold water
  • 250g mascarpone
  • 150ml whipping cream
  • 50g icing sugar
  • 1 tsp vanilla extract
  • 400g fresh strawberries
  • 2 tbsp strawberry jam

Instructions

  1. Make dough with flour, butter, sugar, yolk, and water.
  2. Chill dough for 30 minutes.
  3. Roll out and bake tart shell until golden.
  4. Cool completely.
  5. Whip mascarpone, cream, icing sugar, and vanilla.
  6. Fill tart shell.
  7. Top with sliced strawberries.
  8. Brush with warm jam and chill before serving.

Notes

Use ripe strawberries for best flavor. Chill before serving. Add strawberries close to serving time for freshest texture.
