Ingredients
8 skinless, boneless chicken thighs (5–6 oz each)
120g unsalted butter
5 cloves garlic (minced or crushed)
1 tsp salt (adjust to taste)
1/2 tsp ground black pepper
1 tsp thyme (dried or fresh)
Instructions
Take chicken out of the fridge 30 minutes before cooking
In a 10-12″ skillet, melt half the butter over medium heat
Sauté garlic in melted butter until golden (5 minutes)
Season chicken thighs with salt, pepper, and thyme
Add thighs to skillet skin-side down and sear for 6 minutes
Flip chicken, dot remaining butter around the pan, and cook another 6 minutes
Reduce heat to low, cover, and simmer for 10 minutes
Uncover and continue cooking 5 minutes for golden crust
Remove from heat and let rest for 5 minutes before serving
Notes
Use clarified butter (140°F) for higher smoke point
Add garlic last-minute if making ahead (store extra garlic separately)
Space chicken thighs 1″ apart to ensure even crisping
Adjust garlic quantity to preference, up to 6 cloves for extra flavor
Monitor skillet temperature – aim for 350°F surface heat
