2 tablespoons unsalted butter, melted
3 cloves minced garlic (mashed with fork)
1 teaspoon Italian seasoning (or rosemary/thyme)
1/2 teaspoon freshly ground black pepper
1/4 lemon zest (optional)
Instructions
Preheat oven to 425°F. Line baking sheet with parchment paper.
Pat chicken dry with paper towels.
Combine melted butter, garlic, 1/2 tsp seasoning, pepper, and lemon zest in a small bowl.
Place chicken on a wire rack over the prepared baking sheet.
Brush butter mixture evenly over chicken surfaces. Sprinkle remaining seasoning.
Bake for 40 minutes, until internal temperature reaches 165°F.
Remove from oven; let rest 5 minutes. Cut into 1-inch pieces.
