- 200g digestive biscuits
- 100g unsalted butter, melted

- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream or heavy cream

Instructions
- Preheat oven to 160°C (320°F).
- Mix crushed biscuits with melted butter.
- Press mixture into a pan and chill for 15 minutes.
- Beat cream cheese until smooth.
- Add sugar and mix gently.
- Add eggs one at a time, mixing slowly.
- Stir in vanilla extract, cream, and lemon juice.
- Pour filling over the base.
- Bake for 45–55 minutes until slightly set.
- Cool in oven with door slightly open for 1 hour.
- Chill in fridge for at least 4 hours before serving.
Notes
Use full-fat cream cheese for the creamiest texture. Avoid overmixing to prevent cracks. Chill overnight for best flavor and structure. Serve with fresh fruit or berry sauce for extra flavor.
