Ingredients
1 lb (450g) top round steak
2 tbsp Texan taco seasoning
1 tbsp light olive oil
1 small yellow onion
1/2 cup cheddar cheese (optional)
Instructions
Dice beef into 2cm cubes. Pat dry with paper towels
Whisk seasoning ingredients. Coat beef thoroughly
Heat oil in cast iron skillet over high heat
Add meat in single layer. Sear 2-3 minutes per side
Add 1/2 cup beef broth. Reduce heat to medium-low. Cover and simmer 10 minutes
Uncover and cook 5-7 minutes until juices reduce
Let rest 5 minutes before serving
Notes
Replace beef with ground beef or tofu for alternative options
Use homemade corn tortillas or warm store-bought shells
Microwave tortillas for 10-15 seconds to increase pliability
Add toppings like cilantro, salsa, or lime on serving
