12–18 tortillas (warm flatbreads recommended)
2 tbsp olive oil (or avocado oil)
1 medium onion (or shallots/green onions)
3 cloves garlic (or granulated garlic)
Chili powder (1 tbsp approx)
Ground cumin (1 tsp Approx)
Paprika (1 tsp approx)
Salt (1 tsp approx)
Black pepper (½ tsp approx)
Instructions
Preheat oven to 425°F (220°C) for 10+ minutes
Spread tortillas on baking sheets lined with wire racks
Divide seasoned beef mixture among tortillas
Fold tortilla edges into pleats to enclose fillings
Brush tortillas with oil if desired for extra crispiness
Bake for 18–22 minutes until tortillas are golden and puffed
Let rest for 5 minutes before adding lime, cilantro, and jalapeños
Notes
Use wire racks to prevent sogginess
Add toppings only after baking
Warm tortillas first if cold
Avoid opening oven during first 12 minutes for even browning
Substitute olive oil with avocado oil for higher smoke point
