Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup cold unsalted butter
  • 1 egg yolk
  • 2 tablespoons cold water
  • 1 cup mascarpone or cream cheese
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries
  • 2 tablespoons strawberry jam
  • 1 tablespoon warm water

Instructions

  1. Mix flour, sugar, and butter to make dough.
  2. Add egg yolk and water, then chill 30 minutes.
  3. Roll dough into tart tin.
  4. Bake at 350°F (175°C) for 18–22 minutes.
  5. Cool shell completely.
  6. Beat filling ingredients until thick.
  7. Spread filling into shell.
  8. Arrange strawberries on top.
  9. Brush with jam glaze and chill before serving.

Notes

Chill dough before baking for best texture. Pat strawberries dry before arranging. Assemble same day for crisp shell and fresh fruit.
