- 1 1/4 cups all-purpose flour
- 1/4 cup sugar
- 1/2 cup cold unsalted butter
- 1 egg yolk
- 2 tablespoons cold water
- 1 cup mascarpone or cream cheese
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries
- 2 tablespoons strawberry jam
- 1 tablespoon warm water
Instructions
- Mix flour, sugar, and butter to make dough.
- Add egg yolk and water, then chill 30 minutes.
- Roll dough into tart tin.
- Bake at 350°F (175°C) for 18–22 minutes.
- Cool shell completely.
- Beat filling ingredients until thick.
- Spread filling into shell.
- Arrange strawberries on top.
- Brush with jam glaze and chill before serving.
Notes
Chill dough before baking for best texture. Pat strawberries dry before arranging. Assemble same day for crisp shell and fresh fruit.
