A soft and elegant Cherry and Almond Clafoutis made with fresh cherries and a light custard batter. This simple French-inspired dessert is delicate, lightly sweet, and perfect for any occasion.

Ingredients

  • 300g cherries
  • 3 eggs
  • 100g sugar
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 120ml milk
  • 60ml cream
  • 80g flour
  • 30g ground almonds
  • Pinch of salt

Instructions

  1. Preheat oven to 180°C.
  2. Grease baking dish and add cherries.
  3. Whisk eggs and sugar.
  4. Add milk, cream, vanilla, almond extract.
  5. Mix in flour, almonds, salt.
  6. Pour batter over cherries.
  7. Bake for 35–40 minutes until set.

Notes

Use fresh cherries for best flavor. Do not overmix. Let clafoutis cool slightly before serving. Dust with icing sugar if desired.
