- 200g digestive biscuits, crushed
- 100g unsalted butter, melted
- 600g cream cheese
- 3/4 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 320ยฐF (160ยฐC).
- Mix biscuit crumbs with melted butter.
- Press into a springform pan.
- Bake for 10 minutes, then cool.
- Beat cream cheese until smooth.
- Add sugar and mix gently.
- Add eggs one at a time.
- Stir in vanilla, sour cream, and lemon juice.
- Pour filling over crust.
- Bake in a water bath for 50โ60 minutes.
- Cool in oven with door slightly open.
- Chill for at least 4 hours or overnight.
Notes
Use room temperature ingredients for a smooth filling. Avoid overmixing to prevent cracks. Chill thoroughly before slicing. Cheesecake tastes even better the next day.
