Basil and Almond Pesto is a fresh, vibrant sauce made with basil, almonds, garlic, Parmesan, and olive oil. Perfect for pasta, toast, and vegetables.

Ingredients

  • 2 cups fresh basil leaves
  • 1/2 cup almonds
  • 23 garlic cloves
  • 1/2 cup Parmesan cheese
  • 1/2 cup olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and dry basil leaves.
  2. Toast almonds lightly if desired.
  3. Add basil, almonds, garlic, and Parmesan to food processor.
  4. Pulse until chopped.
  5. Slowly add olive oil while blending.
  6. Add lemon juice, salt, and pepper.
  7. Blend until smooth.
  8. Adjust consistency if needed.

Notes

Toast almonds for deeper flavor. Store in fridge with olive oil layer. Freeze in portions for later use.
