- 250g digestive biscuits
- 120g unsalted butter, melted
- 600g cream cheese
- 200g caster sugar
- 200ml sour cream
- 3 large eggs
- 1 tbsp vanilla extract
- 1 tbsp plain flour
- Zest of 1 lemon
Instructions
- Crush biscuits and mix with melted butter.
- Press into a springform pan and chill.
- Beat cream cheese until smooth.
- Add sugar and mix well.
- Add sour cream, vanilla, and flour.
- Add eggs one at a time.
- Pour mixture over crust.
- Bake in a water bath until set.
- Cool slowly and refrigerate overnight.
Notes
Use full-fat cream cheese for best texture. Do not overmix. Chill overnight for best flavor. Serve with berries or fruit sauce if desired.
