Ingredients

  • 250g digestive biscuits
  • 120g unsalted butter, melted
  • 600g cream cheese
  • 200g caster sugar
  • 200ml sour cream
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1 tbsp plain flour
  • Zest of 1 lemon

Instructions

  1. Crush biscuits and mix with melted butter.
  2. Press into a springform pan and chill.
  3. Beat cream cheese until smooth.
  4. Add sugar and mix well.
  5. Add sour cream, vanilla, and flour.
  6. Add eggs one at a time.
  7. Pour mixture over crust.
  8. Bake in a water bath until set.
  9. Cool slowly and refrigerate overnight.

Notes
