Ingredients
Green cabbage (3 cups, shredded)
Apples (2 medium, julienned, Granny Smith or Honeycrisp)
Mayonnaise (1/2 cup, vegan compatible)
Apple cider (1/4 cup, unsweetened)
Mustard (1 tbsp)
Sugar (1 tbsp)
Vinegar (1 tbsp)
Salt (to taste)
Black pepper (to taste)
Instructions
Shred cabbage and julienne apples and carrots
Whisk mayo, cider, mustard, sugar, vinegar, salt, and pepper until smooth
Combine all ingredients in a bowl; chill for 30 minutes before serving
Notes
Use frozen cabbage (defrosted) to save time
Add 1/2 tsp celery salt for depth
Julienne apples with a mandoline to reduce browning
Store leftovers in airtight containers (up to 48 hours)
