Ingredients
1.5 lbs chicken thighs, skinned
3/4 cup flour (bread flour preferred for crunch)
2 tbsp butter (salted, for bold flavor)
1 tbsp garlic powder
2 tbsp olive oil
1 tbsp fresh herbs (such as parsley; substitute if needed)
1 lemon, finely grated (zest only)
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C).
In a bowl, mix flour with garlic powder and herbs.
In a separate bowl, soften butter and mix in lemon zest and a pinch of salt.
Coat the chicken pieces with the seasoned flour.
Heat olive oil in an oven-safe skillet. Sear the chicken for 2 minutes per side, then add the butter mixture to the skillet.
Transfer skillet to the preheated oven. Bake for 15-20 minutes, or until the chicken is cooked through and golden.
Serve hot with a squeeze of fresh lemon and mashed potatoes or rice for a complete meal.
Notes
Chicken thighs cook more evenly than breasts, ensuring moist results.
If you don’t have a skillet that fits in your oven, transfer the chicken to a baking sheet after searing.
Leftover chicken bites can be stored in an airtight container in the fridge for 2-3 days or frozen for up to 1 month.
